Air Fried Crispy Mixed Veggies with a Tangy Dipping Sauce

Having crispy fried vegetables makes it easier to get your veggies in, but obviously adding all of that fat and carbs to veggies basically negates any health benefit of eating your vegetables. There’s no better way to combat that craving for something crispy and crunchy than bringing out the Air Fryer! This recipe is so simple and versatile that you can use it with any of your favorite veggies. These delicious Air Fried Crispy Mixed Veggies with a creamy, Tangy Dipping Sauce are great as an afternoon snack or party appetizer that is sure to be a crowd pleaser. Check it out!

Ingredients

Air Fried Mixed Veggies

  • 8 oz of String Beans
  • 1 cup of Broccoli Florets
  • 1 Red Bell Pepper, sliced
  • 1 Zucchini, slice into 1/4″ thick pieces
  • 3 eggs
  • 1 & 1/2 cup of Whole Wheat Panko Bread Crumbs
  • 1/2 cup Almond Flour
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Dried Parsley

Chef Note: You can really use any vegetable you want with this recipe such as Onions, Cauliflower Florets, or even Asparagus just to name a few ideas.

Tangy Dipping Sauce

  • 1 cup Light Mayonnaise
  • 2 tbsp Ketchup
  • 4 tsp Creamy Horseradish
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Dried Parsley
  • 1 tsp Garlic Powder

Instructions

Tangy Dipping Sauce:

  1. Mix all ingredients together thoroughly in a bowl. If the tang/spice is too strong for your liking, gradually add more ketchup a teaspoon at a time to balance out with sweetness until it is too your liking.
  2. Refrigerate for at least 1 hour before serving. Can be stored in an air tight contained in the fridge for up to 2 weeks.

Air Fried Mixed Veggies:

  1. Pre-heat your Air Fryer to 380 degrees F. In a small bowl, beat the 3 eggs and leave to the side. In a deep bowl, stir together the whole wheat panko bread crumb, almond flour, salt, ground black pepper, paprika, cumin, onion powder, and garlic powder.
  2. Set up a platter lined with parchment or wax paper. Line up a station of egg wash, bread crumb mixture, and parchment platter. Dip the veggies in the egg wash to coat completely, shake off excess egg, then coat into the bread crumb, then place on the platter.
  3. Spray the air fryer basket with cooking spray. Place the breaded veggies in the basket in a single layer, do not crowd the basket. Cook at 380 degrees F for 8 minutes. Remove once cooked and sprinkle with a little extra salt if desired as soon as it comes out of the air fryer. Serve hot with the chilled Tangy Dipping Sauce, and enjoy!
